Matured Gascon pork ham
Domaine de St Géry ham won the Best Ham in the World award in 2014...from our Spanish friends.
It's a real favorite: this ham is perfect, combining smoothness and firmness, its fat is a delicacy in its own right, it avoids any "oily" side, and its taste is of rare subtlety and power.
Patrick has chosen to work only with happy animals: he supports the breeding of black Gascon pigs raised in the wild, in wooded areas, fed naturally on acorns and seasonal grasses... He has also developed maturing techniques for which he keeps many secrets, but let's just remember that his yeasts are indigenous (no chemical yeast) and that the maturing of his hams is long, very long...
Tasting a 50-month ham is a luxury and a wonderful culinary experience....

The whole ham is sold in a magnificent wooden crate which serves as a preservation frame and contains a support for presentation and cutting.
