A variety of olives that is highly appreciated, the Picholine is picked in October when the fruit is still green and without oil inside.
After a respectful de-bitterization of the fruit, the olive is preserved in water and salt. This results in an olive with a very crunchy flesh that surprises and delights by its freshness.
