Discover Maison Brémond's Dyade 1st Harvest Extra Virgin Olive Oil: the first harvest takes place in mid-October, producing an oil with a green, herbaceous fruitiness and an emerald color.
A very rare variety, a Dyade harvest means that a single fruit can produce a range of brilliant flavors, depending on whether it is harvested earlier or later. The climate, the nature of the terroir and the variety of the fruit create a singular alchemy, resulting in an equally exceptional oil.
Perfect to enhance endive salad with blue cheese & walnuts, in cold soups such as gazpacho, vegetable stews, pan-fried white or green beans, with semi-hard cheeses (gouda, blue cheese).

Tasting notes: a fruity green with notes of sweet almond, apple, artichoke and avocado, very pleasant and delicate on the nose.
On the palate: this olive oil is sweet at first, very almondy, finishing with a slight astringency and ardency with notes of green banana peel.
