Inspired by the historic recipe books of La Tour d'Argent's gastronomic heritage, the Chef has developed his own sauces: Mazarine with orange, Marco Polo with green pepper and Mac Arthur with red wine.

Made in the kitchens of the Tour d'Argent in Paris by Chef Yannick Franques, Meilleur Ouvrier de France, this sauce is made from fresh duck, herbs and red wine. The result of a slow and controlled cooking process, this sauce is a nectar full of flavours and concentrated juices.

Chef's advice: Warm the Mac Arthur sauce in a bain-marie for a few minutes.
The Mac Arthur sauce traditionally accompanies Tour d'Argent duck, either on its own or in combination with Mac Arthur salt, but it can also be served with red meat.
