The Pouilly Fuissé "Vieilles Vignes" 2017 of Domaine VESSIGAUD in conversion to Organic Agriculture since 2010, is made from 6 ha of old Chardonnay vines (age of the vines 40 to 70 years). The blend of different climates of Fuissé gives this Pouilly Fuissé complexity and balance. It is a powerful, fat, unctuous wine with a nice mineral freshness, a subtle wine, with a woody and fruity nose, which will blossom after a few years in the cellar (between 5 and 10 years).
This Pouilly Fuissé is best served at 12-13 degrees and will accompany Bresse poultry, fish, foie gras, braised calf sweetbreads, goat cheese, Brillat-Savarin.
