This vintage was born more than 25 years ago with the desire of Jean-Etienne and François Matton to offer a wide audience of lovers of Provence rosés a wine that combines aromatic expression and lightness in the mouth with a thorough mastery of the terroirs of Provence. This vintage is the result of a meticulous blend of a selection of grapes from the Appellation with those from the Property. Everything is vinified with a control of the vinification temperatures, low enough to preserve the aromatic potential of the grapes, but high enough to extract their subtleties. Grenache is blended for the elegance of the aromas, Syrah for the aromatic complexity, Cinsault for its freshness as well as Rolle, a great white grape variety from Provence that adds mineral aromas to the wine. A vintage with a crystalline color, which presents a finesse on the nose. Notes of tangy red fruits dominate. The apricot is revealed in a second time. A great minerality stretches the mouth all in length. The beautiful minerality in the finish calls for seafood, with the iodized oyster as a star product but also whelks, clams, everything that makes up the oyster platter. Fish in ceviche and sushi, California rolls or grilled fish will also go very well. Italian cuisine of course, that of the pretty trattoria dishes like the Milanese escalope or the pasta alle vongole and the beautiful Provençal cuisine, with small stuffed or a vegetable tian.
